Asian Spinach Carmella Salad

Asian Spinach Carmella Salad
1 pound mung bean sprouts
1 bag spinach sliced thinly
1-2 cups mushrooms sliced I don’t care for mushrooms, so I used Eggplant, seasoned, cubed, and steamed with onions until really soft.
1/2 to 3/4 cup green onions
3 cups cooked quinoa
OPTIONAL: 3/4 cup cherry tomatoes, cut in halves
OPTIONAL: 1/2 cup or more of raw cashews (I don’t add nuts as we eat enough nuts in other foods and/or desserts)

Dressing – Whip together with a fork or wire whip:
3-4 Tbs lemon juice
1/3 cup tamari
1/3 cup sesame oil (it’s really good with toasted sesame oil); or if you don’t have sesame, you could use olive oil
2-3 garlic cloves crushed
Salt to taste
1 Dropper full of liquid Stevia, orange flavored (the dish at the potluck didn’t have the Stevia, but it really brings out the Asian taste).
OPTIONAL: 1/8 cup sesame seeds and 2 Tbs water
OPTIONAL: 1/8 cup tahini

Mix all salad ingredients in a bowl.
Toss well with dressing.
Let marinate for at least one hour to allow for the flavors to blend.

Great Cranberry Relish for Thanksgiving

Raw Cranberry Relish
Makes 1/2 cup

1/2 cup dried cranberries, soaked for 30 minutes, drained
2 medjool dates, chopped (2 tablespoons)
1/2 teaspoon unseeded and diced jalapeno
2 tablespoons freshly squeezed orange juice
1/4 teaspoon orange zest
1/8 teaspoon cinnamon
pinch cardamom or nutmeg
pinch allspice

1. Place all ingredients in a food processor or strong blender and quickly pulse chop. If you do not have a food processor, you can chop the cranberries and combine them with other ingredients in a bowl and mix well.
